Earthy and rustic, this loaf is an incredible source of fibres: it helps reducing "bad" cholesterol levels, plus spelt contains higher levels of protein, manganese, niacin, thiamine, copper & vitamin B2 than regular wheat. More than half of the flour we use to make this particular loaf is wholemeal organic spelt flour, and the remaining flour is white, organic and untreated.
What makes Spelt flour so healthy?
An ancient grain, Spelt has been cultivated since 5000 BC, making it one of the oldest grains known to be continuously used by mankind. Like khorasan (kamut), quinoa, millet, amaranth, and other grains, Spelt has not been manipulated in the centuries: it is ‘a food that our body recognizes as food, not one that was created for modern conveniences’. Plus, unlike wheat, it is grown using little or no pesticides thanks to its hardy husk, which prevents insects from attacking the grain.
Spelt is, also, lower in gluten than regular wheat, so it is easier to digest for those with slight gluten intolerances, and ideal for people who are merely avoiding gluten for personal (rather than medical) reasons. It is not suitable for Celiacs, unfortunately.
Sliced and frozen, it can last up to 3 months in the freezer, or 5-6 days if well wrapped or closed in an airtight container at room temperature. Never put bread in the fridge.
