soft pistachio pastry cream
If you love pistachios and nuts in general, then this is THE croissant! The 2 creams have a slightly different consistency, to give you a perfectly round flavour, and the caramelised pistachios give it that extra crunch that will perfectly top it off!
Croissant dough: Organic flour, butter, sugar, water, milk, sea salt, honey, cocoa butter, vanilla extract.
Pistachio Pastry Cream: milk, pistachio paste (glucose syrup, inverted sugar syrup, almond pulp, pistachio pulp 5%, hazelnut pulp, concentrate (carrot, spirulina), natural flavouring), butter, egg, sugar, double cream, cornflour.
Pistachio Ganache: double cream, Belgian white chocolate (Belgian white chocolate Couverture (Min cocoa 28.1/ Min milk solids 23%), Sugar, Cocoa butter, Whole milk powder, Cocoa mass Emulsifier; Soya lecithin Natural vanilla), pistachio paste (glucose syrup, inverted sugar syrup, almond pulp, pistachio pulp 5%, hazelnut pulp, concentrate (carrot, spirulina), natural flavouring).
Glaze: egg, milk, honey.
Crunchy pistachios: pistachios, sugar, butter.
