2021 Bread Product of the Year
Weight: approx 480-500g, about 8-10 slices
Made with pure unsweetened cocoa powder, dark and milk chocolate chips, and a bit of milk in the dough, to add a little bit of creaminess to the crumb.
Try it (obviously!) with nutella (check our third pic, and yes! as soon as we took that photo we had to spread it well all over the slice and eat it!), strawberry jam, or peanut butter for a boost in the morning!
This is what British Baker had to say about it:
“It’s like having dessert in your bread!” That’s how London-based Buzzing Bee Baked Things describes its enticing Chocolate Sourdough.
The dough is slightly sweet due to light brown sugar and milk in the mix and swirled with intense cocoa. The irresistibility factor is upped even further with milk and dark chocolate chips.
No yeasts are used in the making of this sourdough, which is bulk-proofed for four-to-five hours before the chocolate chips are added to create the swirl. The bread is then put in the fridge for cold proving overnight and baked the next morning.
The marbling inside the loaf comes out different every time due to the hand-made process, and the judges were highly impressed by the precision of the folding and moulding that went into the creating this stunning effect. It wasn’t just the appearance of the loaf that caught the panel’s attention, though, as the smell also met with its approval.
Moreover, the judges were wowed by the depth of taste and the perfect open sourdough texture. “Wow, just wow,” was the reaction, as the loaf scored top marks all round. The panel concluded that the bread was utterly delicious and showed what creative innovation and a high level of skill could achieve when using a sourdough base.”
Please note that your loaf will always be made with the same amount of flour per loaf, but we have to adapt the amount of water to the humidity in the air: that plus baking-caused evaporation may result in fluctuations in your loaf's weight.

If by mistake your postcode is not in our delivery area and you add one of the restricted products, the cart will give an error message: you will need to remove the sourdough-based products to proceed with the order.

Deborah, co-owner of Buzzing Bee, is an experienced Baker who has almost 15 years of experience in the industry.
Check out her baking story:
After a year of studies in bakery and pastry school, she worked for 6 years as an apprentice in bakeries around North Eastern Italy, and she run the whole production of a patisserie/coffee shop before moving to England, the country she fell in love with while on a 2013 trip for a Cake Design course at Squires Kitchen School in Farnham, Surrey, in 2014.
After a Cake Design course at Le Cordon Bleu, London, she found a job in North London in a production bakery, to then leave for her first restaurant job. From there she worked in restaurants such as Roka, Aviary at the Royal London House, and The Wolseley (where she was promoted to Junior Sous Chef in under a year).
With all this experience on her shoulders, she launched Buzzing Bee with Marco in June 2019, and now is the bakery wizard in the kitchen, creating and testing the recipes, and being constantly focused on making the best product you could ever have.
